I am so glad school is finally underway and we are on a semi-regular/normal schedule. I will be the first to admit, I can be pretty lazy! I love to sleep in, so when the kids were on summer vacation, I got to stay in bed until well past 10! As delicious as staying in bed is, that means I am not getting as much work done as I needed. So, the kids being back in school benefits all of us! When Caitlin comes home, she usually has several hours of work ahead. She usually has a snack and relaxes for a bit before she dives into her work. One of her most requested snacks is a brownie ice cream sandwich.
Whenever I make the Brownie Ice Cream Sandwich Recipe, the kids want to help. In the past, we just make the brownies from a mix and added store bought ice cream. With our recent acquisition of a Zoku Ice Cream Maker ($24.99), we have been making our own ice cream, frozen yogurt and gelato. This week, we had some fresh strawberries leftover, so we decided to make the Brownie Ice Cream Sandwich Recipe with strawberry ice cream. The Zoku Ice Cream Maker has been so much fun, for both me and the kids. Henry is homeschooled, and he has been showing a small interest in helping in the kitchen. I decided to let him help me make some ice cream with the Zoku Ice Cream Maker. We called it our science experiment for the day! We had so much fun making our own ice cream with our Zoku. It was surprisingly easy to make the ice cream. We used the strawberry ice cream recipe from the Zoku Blog Ice Cream Recipes. I think the hardest part was waiting for the ice cream to be ready to eat! For the brownies, we just use a store bought chocolate brownie mix. Prepare the brownies according to the recipe. You can cut the brownies into squares or rectangles, or like I did, in circles. It is totally up to you. When the ice cream is ready, transfer it from the Zoku Ice Cream Maker, into a square baking pan. Spread the ice cream evenly and put back in the freezer until it is firm, about 15 minutes. If you want another option for the brownies, you can make my Red Velvet M&M Brownies. They are super yummy. Take the pan out and using the same method you used to cut the brownies, cut your ice cream. Since I used a circular cookie cutter, I used the same with cutting the ice cream. This way it is more uniform. As you can see from my pictures, you may get something more like the Leaning Tower of Pisa, but they still taste good, right?!
Zoku Strawberry Ice Cream Recipe
Ingredients
- 1 ½ cups rinsed and hulled fresh strawberries
- ½ cup granulated sugar
- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon vanilla extract
- ¼ teaspoon Kosher salt
- 1 ¼ cups heavy cream
- 1 ¼ cups whole milk
Instructions
- DIRECTIONS
- Puree the strawberries, sugar, lime juice, vanilla extract and salt in a blender or food processor. Add the cream and milk and pulse to combine. Chill ice cream mixture and stir well before using.
- FREEZE
- Follow the instructions included with your ice cream maker for churning and freezing.
