When I was a little girl, I remember watching my mom in the kitchen. I loved the smells coming from the oven and the food she created. With a family of 6, mom knew how to save money like a boss! My dad was a city bus driver and mom stayed at home with the kids. To say money was tight would be an understatement. The funny thing was we never knew how hard mom was pinching those pennies. We never wanted for anything and we seemed to always have the same things other kids had. One of our favorite sweet indulgences was ice cream. My dad’s favorite candy was Reese’s Cups. He would buy them and sneak them to my sister and I when mom wasn’t looking! Mom figured out how to turn that beloved candy into dad’s favorite ice cream. Mom would make her Homemade Peanut Butter Fudge Ice Cream and we loved it! It only took a few ingredients and a few hours in the freezer. Mom’s basic homemade ice cream recipe was easy to tweak so we could make whatever flavor we wanted. My favorite was Chocolate Mint and my sister’s favorite was plain old Vanilla. I remember sitting on the front porch, eating a bowl of homemade ice cream and watching the cars go by.

In the winter, mom swore it was too cold to eat ice cream and Dad was not happy with that plan. Mom told dad she had a family recipe from her own mother for making Homemade Ice Cream Bread. She would make her ice cream as usual not put it in the freezer. Instead, she would take 2 cups of the ice cream mix and add in 2 1/2 cups of flour. She would preheat the oven to 350 degrees, spray a loaf pan and pour the mixture into the pan. She would cook the bread for 35-40 minutes, or until a toothpick came out clean. You can add sprinkles, chocolate chips, nuts or dried fruit if you like. I promise this will be a family favorite from the first bite!

Homemade Peanut Butter Fudge Ice Cream

Ingredients

  • 1 can sweetened condensed milk
  • 1/2 cup creamy peanut butter
  • 1/2 teaspoon vanilla extract
  • 2 cups heavy cream
  • 3/4 cup fudge sauce

Instructions

  1. Stir together the first three ingredients. Set aside.
  2. In your mixer, whip the heavy cream until you get stiff peaks. Fold in the milk/peanut butter/vanilla mixture until well combined.
  3. Pour half of your mixture into a 2 quart container. Add half of your fudge sauce, top with the remainder of the ice cream mixture and top with the remaining fudge sauce. Using a butter knife, swirl the chocolate into the ice cream mixture.
  4. Cover and freeze overnight.
