My kids love to help in the kitchen, especially when I am making something they love. Lately, they cannot get enough of these Vegan Chocolate Chunk Mixed Berry Cookies! A similar recipe we tried that we also love are my Vegan Breakfast Cookies.
These Vegan Chocolate Chunk Mixed Berry Cookies make a great breakfast option as well. We run late most mornings, so a grab and go meal is what works best for us. These cookies are as filling as they are tasty. What sets them apart from other vegan cookie recipes is that I use the all natural freeze dried fruits from Crunchies.

Ingredients
- 1/2 cup whole wheat flour
- 2 cups rolled oats
- 1 cup Crunchies Dried Fruit of your choice (I used Blueberries, Strawberries and Raspberries)
- 1 1/2 cups vegan chocolate chunks
- 1/2 teaspoon baking soda
- 1/4 cup mashed banana
- 1/2 cup packed brown sugar substitute
- 1/2 cup applesauce
- 1/3 cup water
Instructions
- Preheat oven to 350 degrees.
- In a small bowl, add flour, baking soda and salt.
- Add in your brown sugar, vanilla, water, banana and applesauce.
- Add in the oats, dried fruit, and chocolate.
- If your mixture is too wet, cover with plastic and chill for a few hours.
- Add a dollop of mix, using a large ice cream scoop, onto your baking sheet or in your muffin tin , Allow room for some spreading. Bake 16-18 minutes. Allow to cool on a wire rack.
