This is a sponsored post. All opinions are mine. I am a busy mom, but that does not mean my kids should lack a delicious and healthy meal. The trick is finding a recipe that covers all the basis. As a mom of a kid with special needs, this is even trickier for me.
Henry has autism and has many food aversions. That includes most vegetables. When I discovered the new line of frozen veggies from Green Giant®, I shouted hallelujah! They are perfect for my new 30 Minute Hidden Veggie Tater Tot Casserole!

These Green Giant frozen products are the answer to an ongoing struggle many of have had for years! My kids are not the only ones who can benefit from these clever products! About a year ago, I was diagnosed as being prediabetic. I have struggled with cutting back on my sugars and carbs. I had no idea eating a carb heavy diet could affect my glucose levels.
I knew I wanted to cut out the white flours and rice. It was difficult. But with the frozen food products from Green Giant, it is a breeze! They are perfect for people like me who are carb swapping for a healthy lifestyle.
My kids love tater tots. They could eat them all day, every day. I cannot let them eat such a carb heavy snack as often as they would like. What a great compromise the Green Giant Veggie Tots are for my family.

That is so great! Anything that can help us get veggies into the little ones is a winner.
That’s a great idea. No child can resist the siren call of tater tots. I have to make this for the fam.
My kids are good about eating their veggies, but still. I think some tater to action in our lives is always a good thing. I’ll have to fire up the oven and give this a try.
That’s a clever way to work them in. Its nice that they’re diced so small too!
Riced veggies?! How cool! I have only seen these types at Whole Food and Trader Joes. Nice to see them spreading further!
What a great idea to get kids to eat veges. I’ve found they love them or hate them. Always good to try and sneak them in.

What a great way to disguise the veggies. I would love to try this for my picky eaters.
I have not seen them in the store. I will definitely look for them. My husband would not eat them if he knew what it was. I am trying it for him. Thank you for the recipe.

My husband loves to eat cauliflower as an alternative to so many things. I bet he’d love to try these new things from Green Giant.

Veggies I mean 🙂 Thanks for sharing!
I saw those in the store but I didn’t look closely. What a clever idea! I think these would be very handy to have in the freezer. I will try your recipe. We love tater tots too!
My recipes to try are in piles now. Definitely would add this one, Thanks!
We love veggies and don’t really need to “hide” them. But I love to up the veggie content of almost any traditional recipe. Riced cauliflower is great in a half-cauli/half-rice or/half-mashed potatoes mix. The recipes that are all cauliflower do not have the same satisfying texture. The half/half mix is almost indtisnguishable from the original…but half the carbs.
Thank you for sharing that! I could not figure out for the life of me why my mashed cauliflower was so watery I guess it makes sense that it’s naturally that way next time I make mashed potatoes I will definitely do half and half and my husband would love to texture better also thank you so much
Thank you for sharing! I was looking for recipes for these thank you so much! I love the cauliflower tater tots and I too also try to Rice my own cauliflower and it made a huge mess one good recipe with the riced cauliflower that you should try is cabbage rolls made with ground turkey and the rice cauliflower in place of rice and you can do them in the crock pot with the little tomato sauce with no salt added they are delicious I put a dash of mrs. Dash in for seasoning and a little garlic absolutely delicious your recipe was just delicious too I just tried yours and it was very good it’s a keeper I’ll definitely be making this on a weekly basis thank you
What an amazing way to hide veggies! We are huge tatertot and tatertot hotdish fans, so I know I could sneak this past my kids!
I love cauliflower. This is perfect for everyone especially kids and the ones who are gluten restricted.
I have been dying to try those new Green Giant veggie tots. It was nice reading your review so that could know they’re worth the money. I hadn’t heard of the Riced Veggie Cauliflower but I will be sure to check for it at Walmart. I love that your recipe incorporates so many vegetables. This is sure to be fun and flavorful.
No kiddos, but one of my fave veggie rich meals are pot pies! My personal fave is Lobster Pot Pie, Nom Nom Nom!
That’s scrumptious, well I have a query for that, I am facing Anemia (deficiency of iron) so is this recipe contains iron ??
Oooo yummy!!! Now this is something I really need to make for the family! I have a picky eater so I’m all about sneaking healthy foods into things

This is super simple, even I can make it!
This does sound wonderful, and I don’t think I would bother to try ricing veggies, it is worth it, and I hope it is helping you, too.
I’ve never tried rice vegetables from Green Giant before. I actually haven’t seen them at the stores in our area but will keep a lookout. I know my kids would love any dish served with tater tots 🙂
What a great fast recipe. I didn’t even know that they sold riced veggies. I can’t wait to try this recipe for my family.
I think the one I’ll try is the cauliflower one. I would like to find something that works like rice but is a vegetable. Better for my family. I wish they sold these in every supermarket and now just walmart. I’m going to look for them in my local store.
. I am always looking for new recipes to try. Thanks for the recipe.

I haven’t done much cooking with Tater Tots. Our kids are long grown. But I do love potatoes and am always looking for new recipes. Tasty dishes are always welcome in our home.
This looks great (though the idea that the vegetables are somehow concealed seems a tad optimistic).
I love this idea for everyone, especially me. I need to eat more vegs and just do not. I will have to try this recipe next week. Thank you for the idea.
We tried this recipe and i love it. I love getting the extra vegs and they taste so good. I am trying to add them to other dishes.
I am still making this dish. We love it. The kids like to help me make it.
