One of my favorite things about football season is the food! We entertain a lot during football season, so I am always looking for easy to make tailgating recipes. I have always loved pork, and even more so now that I am watching my weight. Pork is a versatile protein I can use in a lot of my favorite recipes. It cannot get any easier than putting Smithfield Marinated Fresh Pork into the crockpot. I can add a few ingredients, set the crockpot on high for 4-5 hours and I am good to go.

Crockpot Pulled Pork Sandwich With Cranberry Apple Slaw

Ingredients

  • 1 Smithfield Fresh Pork Loin Filet (flavor of your choice)
  • 1/2 cup chicken stock
  • 2 cups peeled, chopped green apples, divided
  • 1 cup dried cranberries, divided
  • ¼ cup brown sugar
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 cup BBQ sauce
  • 1 bag slaw mix
  • 1/2 cup cole slaw dressing

Instructions

  1. Place your Smithfield Marinated Fresh Pork Loin Filet in your crockpot. Add chopped green apples and 1/2 cup dried cranberries, Add the brown sugar, cinnamon and nutmeg to the chicken stock, Mix well and pour over pork loin filet. Cook on low for 5-6 hours. Shred your pork loin and mix with contents of crockpot. Add BBQ sauce. Mix well.
  2. In a medium bowl, add your cole slaw mix, remaining chopped apples and dried cranberries. Mix well, Add cole slaw dressing. Mix well again.
  3. Add one scoop of shredded pork to your slider bun. Top with cole slaw mixture. Enjoy!
