This is a sponsored post on behalf of Reese Specialty Foods®. Thank you for inspiring this delicious Mediterranean Orzo Salad with Homemade Citrus Vinaigrette! This post contains affiliate links and/or images. Of course, as always, all opinions are 100% mine. When you think of healthy foods, what comes to mind? I used to think of rice cakes and carrot sticks. Pretty boring, right? I have found this does not have to be the case! You need to experiment with recipes and products. I bet you can create a quite tasty and healthy meal!

This Mediterranean Orzo Salad With Homemade Citrus Vinaigrette is an easy healthy salad recipe. This easy dinner idea is crisp, light and refreshing. Perfect for summer! #ad @reesespecialty #HeartToHeartKitchen #ReeseSpecialtyFoods

Salads are a mainstay in our home. This is especially true in the summer. We have a small house, so when we use the oven, it can heat up the entire house. We have begun eating a more plant based diet. This means lots of fruits and veggies are the stars of many recipes. One of my favorite salads is a Greek Salad. I love all the flavors when blended together.

Now that you have seen a preview, let’s jump into the details of the recipe!

Mediterranean Orzo Salad With Homemade Citrus Vinaigrette ingredients

Recently, I created a Mediterranean Orzo Salad with Homemade Citrus Vinaigrette recipe. It uses my basic Greek salad recipe with a few unexpected additions! We love orzo, so that small pasta was a fun ingredient to add. We also use avocados, which are a favorite of my husband.

Mediterranean Orzo Salad With Homemade Citrus Vinaigrette artichokes

The addition of my Reese® Hearts of Palm and Marinated Artichoke Hearts amp up the flavor in this recipe!  Have you tried Hearts of Palm? They are a vegetable which comes from the inner core of a palm tree. How exotic! They are a healthy choice for any dish. They are low in cholesterol, are Non-GMO, rich in potassium and contains Vitamin C. See?! Healthy!
