My guys don’t like turkey, so Caitlin and I have a small breast. The boys get a meatloaf. One thing we all agree on is how much we love dessert! It’s pie season and what’s more fun than baking your own pie? Eating a pie you baked yourself! But you might be thinking that a whole pie of one flavor is too much. The baking experts at Chicago Metallic understand completely. They’ve brought out two amazing solutions to the problem.

Instead of making one big pie how about making a few smaller ones? This way you can make several different kinds of pies that are the perfect size for dessert. Mini Sea Salt Caramel Apple Pies ingredients

Here is what you will need for your Mini Sea Salt Caramel Apple Pies:

1 tbsp. butter
1 large granny smith apple, peeled, cored and finely diced
1 tbsp. sugar
1 tbsp. brown sugar
1/2 tsp. lemon juice
1/4 tsp. ground cinnamon
1 tsp. cornstarch
2 tsp. water
1/2 cup caramel chips, divided
1 tsp. sea salt
1 refrigerated or homemade pie crust

In a small bowl, combine apples, sugars, lemon juice and cinnamon.

Melt butter in a small pan over medium heat. Add apple mixture and cook 3-5 mins,, stirring occasionally. In a small bowl, combine cornstarch and water. Add to apple mixture. Cook 2-3 mins. or until thickened. Remove from heat and allow to cool completely.

Stir in sea salt and 1/4 cup of caramel chips and set aside.

Roll out pie crust on floured surface. Dip round cookie cutter in flour and cut out 12 crusts. Place into each section of your mini pie pan. Roll remaining dough and make a lattice or other top for pies. Set aside.

Fill each area of mini pie pan with 1 rounded tablespoon of filling. Top with lattice or other top. Gently press edges together.

Bake 10 mins. Reduce oven to 325 and continue to cook for 8-10 mins. or until crusts are golden brown.

Remove from oven and place on cooling rack for 5-8 mins. Remove pies.

In a small microwave container, melt remaining caramel chips. Drizzle over pies if desired. Top with whipped cream. Enjoy!

    I usually serve several pies at the holiday. The one most requested is Coconut Cream. I have several family members who adore it. I love the idea of serving little, individual pies. These are so pretty. With small pies you could taste more than one.

    My favorite holiday pie is my aunt’s pecan pie! She is a terrific baker and even while going through chemo last year she was able to bake all of her holiday pies for our family dinner!

    I’ve loved chocolate cream pie since I was a kid. Now that I’m older and watching my weight I only make it for special occasions and holidays. I could easily eat the whole pie at one sitting it’s so delicious.

    My Apple crumb and Pumpkin pie are the most requested. This is such a nifty idea of individual little pies or even half and half pies. Being able to make a variety of little pies would be fantastic.

    I always make a Peach Pie over the holidays.. We freeze fresh peaches, when they are in season, and it makes a nice change from the heavier holiday desserts I make.

    My favorite pie everyone fell in love with is APPLE PIE using cinnamon rolls for the crust! OMG it is so good! Then you use the icing that comes with the cinnamon rolls to drizzle on top!

    I love any kind of pie, but have never made one. My son helped our elderly neighbor take her pies out if the oven when she was doing her Thanksgiving baking. I love the little pie pans you used when making those mini Sea Salt Caramel Apple pies. They turned out beautifully and I know they were delicious.
