Pudding Filled Cupcakes With Zesty Lemon Buttercream Frosting
My parents loved telling a story about the first time I tasted a lemon. We were at a favorite restaurant with my Gram. We were celebrating her birthday. My mom ordered water with extra lemon. The waiter placed the small plate of lemons between me and my mom. I reached for one and stuck it in my mouth. Instead of making a grimace as one would expect, I smiled and reached for another! Forward a few decades and I still love lemons as much as I did then! One of my favorite recipes are Pudding Filled Cupcakes With Zesty Lemon Buttercream Frosting. What a perfect balance between tart and sweet. The homemade buttercream frosting just melts in your mouth!
The one thing I hated about making this recipe was filling the cupcakes with the pudding. I would either use a spoon or a knife to dig out some of the cupcake. Next, I would spoon or pipe in the filling. Because pudding is so think when it sets, it was hard to work with. Now making my Pudding Filled Cupcakes With Zesty Lemon Buttercream Frosting is so easy! The Cupcake Corer is the perfect tool to make the hole for my filling. And the Filler Bottle has a larger opening, so the pudding pipes in with ease. I love the reusable silicone baking cups because they save me from buying cupcake liners. The decorating bottles and steel decorating tips make decorating my cupcakes so fun! I feel like my cupcakes look almost professional. With some practice, I think you my homemade cupcakes will look like they were store bought!
The recipe for my Pudding Filled Cupcakes With Zesty Lemon Buttercream Frosting is simple. I use a store bought cake mix, either lemon or yellow. Make the mix according to directions. Using the Tall Batter Bottle, fill your Silicone Baking Cups with the cake mix about 2/3 full. Bake according to directions. Allow to cool. Use the Cupcake Corer to make the hole for your pudding. Prepare one box of lemon pudding and allow to semi-set. Using the Tall Batter Bottle, fill the cupcake holes with your pudding.
To make your Zesty Lemon Buttercream Frosting, you need just a few ingredients. You need 2.5 cups of powdered sugar, 1/3 cup butter, at room temperature, 1 tbsp. of lemon juice, 1 tbsp. heavy cream, 1 tsp. lemon extract, and 1 tsp. vanilla extract. In your stand mixer, using the paddle attachment, cream your butter for 1 minute. Add 1 cup of the powdered sugar. Cream for 1 minute. Add your liquid ingredients and remaining powdered sugar. Mix well, for about 4-5 minutes. Spoon into your Kuhn Rikon Decorating Bottles, using the Steel Decorating Tip of your choice. Garnish with a small lemon wedge and mint. I used the yellow Wilton decorating sugar as well. I think they turned out just perfect!
