I have a little confession to make. I am over 50 and just had an avocado for the first time. I LOVED it! Because I am on a journey to lose 80 pounds, I have learned a lot about healthy eating. When I was diagnosed with prediabetes, I learned even more!
In order to get healthy, lose weight and keep my sugar low, I have had to make many changes in my diet. One change I have made is eating healthy fats like avocado instead of “bad’ fats like mayo. Another is to eat a more vegetarian diet, which was surprisingly easy to transition to.
Eating Healthy AND Eating Bread? Yes Sirree!
Another change I made, which was a bit harder, was to give up starches. It is not recommended I eat white rice, pasta, potatoes or breads. But I love bread! I eat bread virtually every day. How was I going to give up something I enjoyed eating so much. Well, the way to do it is to not do it! Instead of giving up bread, I just had to find a bread that fit into my meal plans. That is why I made the switch to whole grain breads.
Ingredients
- 1 ripe fresh avocado, chopped
- 6 hard-boiled eggs, peeled and chopped
- 1 tsp. Deli Style Ground Dijon mustard
- 1 tsp. Tabasco sauce
- 1/4 cup minced onion
Instructions
- In a bowl, combine half of the avocado, mustard, hot sauce and salt; pepper if desired. Mash until smooth. Add the remaining avocado and onion to mixture. Gently fold in eggs.

June 3, 2016 at 3:54 pmI just made this recipe and it is DELICIOUS! Unfortunately I have a gluten allergy, therefore I cannot try those fabulous looking breads. I added a couple of good squeezes from a lemon to keep the avocado from turning brown. Also I stuffed a hollowed out tomato in place of the bread. I think it would be yummy to stuff celery with it, or even spread it on gluten free crackers.
