Slow Cooker Parmesan Herb Chicken and Orzo Recipe
One of my favorite past times is cooking. I loved watching my mom in the kitchen and my kids have spent time doing the same with me. Caitlin and I enjoy creating recipes and even Henry has begun helping with meals as well. What a sweet way to make memories!
One of my most used small appliances in the kitchen is my slow cooker. What would I do without it?! I am always on the lookout for a new slow cooker chicken recipe, and I just discovered one you are going to LOVE!
I just made the Slow Cooker Parmesan Herb Chicken and Orzo Recipe from #SlowCookerSunday -Leadership, Life and Slow Cooking. Oh my word is this dish fragrant and super tasty! It is easy to make, with many of the ingredients a staple in most kitchens.
This amazing cookbook is from John Legere, the CEO of T-Mobile, who is also an incredibly talented chef. I love that not only can I make over 50 delicious recipes, but I can glean some wonderful advice from this accomplished businessman.
Not only do you get to create some darn fine food, but you get to take a peek behind the scenes of his popular SCS cooking show as well as his personal life. You can purchase the book from T-Mobile.com or T-Mobile stores nationwide.
If you read my post, Ways To Pay It Forward Past Giving Tuesday, you know how much John and the other folks at T-Mobile are committed to giving back to others. So, it came as no surprise to learn the net proceeds from the sales of #SlowCookerSunday will go to Feeding America to support its mission to feed America’s hungry.
So, now let’s talk about this delicious Slow Cooker Parmesan Herb Chicken and Orzo Recipe! While it was cooking, the whole house smelled amazing! My husband had not one, not two, but three servings! Here is what you need to make the recipe:
- 4 boneless, skinless chicken breasts or 6-8 boneless, skinless chicken thighs
- 3 teaspoons Italian seasoning, divided
- 3 cups low-sodium chicken broth
- 1 1/2 cups orzo pasta
- 4 tablespoons butter, melted
- 1 cup mushrooms, sliced
- 1 medium white or yellow onion, finely chopped
- 2 teaspoons garlic, minced
- 1 teaspoon salt, to taste
- 1/4 teaspoon black pepper, or to taste
- 1/2 cup Parmesan cheese, shaved or finely shredded
- Freshly cracked black pepper and herbs for garnish
Step 1: Season chicken on both sides with Italian seasoning, salt and pepper. Brown 1-2 minutes in a large non-stick skillet.
Steps 2-8: Transfer chicken to a greased slow cooker. Add broth, mushrooms, butter, onions, garlic and salt and pepper.
Steps 9-10: Cover and cook on high 1-2 hours, or on low for 3-4 hours. Remove lid and add in orzo. Cover and cook on high for 30-45 minutes.
Steps 11-14: Remove lid and lift out chicken and set aside. Stir remaining ingredients and replace chicken on top of mixture. Sprinkle mixture with Parmesan cheese and replace lid. Cook on high for 5-10 minutes, or until cheese is melted. Serve with fresh herbs and cracked pepper.
