Spicy Watermelon and Feta Salad Recipe

With it being so hot outside, I tend to eat lighter. One of my favorites snacks is an ice cold seedless watermelon. Recently we had a BBQ and a friend brought a Spicy Watermelon and Feta Salad Recipe. This salad is the prefect pairing for my Spinach Lasagna Roll Ups!

Spicy Watermelon and Feta Salad Recipe

This light and refreshing Spicy Watermelon and Feta Salad is the easiest fruit salad recipe you will ever make!

The Spicy Watermelon and Feta Salad Recipe was such a hit at the party! It is the perfect balance between spicy and sweet and is light and super refreshing. We are huge water melon lovers in our house and during the summer, we go through 2-3 a week. You can use freshly cut watermelon or finish off the last little bit that is in the fridge. Either way, this Spicy Watermelon and Feta Salad Recipe is the perfect summer side dish.

The kids and I planted some herbs in the spring and we have enjoyed using them in our cooking. This Spicy Watermelon and Feta Salad Recipe is great with some chopped fresh mint. It adds another depth of flavor that your mouth will love! Another reason I love this salad is because it only takes a few minutes of prep.

Spicy Watermelon and Feta Salad

Ingredients

  • 6 cups cubed seedless watermelon
  • 1 cup red onion, cut thin julienne
  • Juice of two limes
  • Pinch of cayenne pepper
  • pinch of sea salt
  • 1 cup crumbled Feta cheese
  • 2 tbsp chopped fresh mint leaves

Instructions

  1. Combine watermelon, red onion ,lime juice, cayenne, sea sat and mint. Mix until well combined, then gently toss in the feta cheese. Serve either on a on plate or in a bowl.

    I love feta and watermelon. It tastes so good together and I have mint in abundance. I always plant it all by its lonesome since it loves to take over. I need to make this ASAP.

    I love a big bowl of watermelon, cantaloupe, strawberries, blueberries and bananas in the summer. I tried watermelon and feta before and I am on the fence. I like it in small doses lol.

    Spicy and watermelon aren’t two words I thought I would hear together. I’ve only had watermelon in a fruit salad or by itself. Very interesting, I’m sending this to my sister. She loves Feta.
