She also starred on Touched by an Angel, but these days she’s best known for her work in the kitchen. Her amazing cooking talents have been wowing fans for years. I have enjoyed seeing this side of Valerie. She has inspired me to add flavor and depth to my cooking.
Valerie’s Home Cooking: More than 100 Delicious Recipes to Share with Friends and Family

Gather your ingredients to make your Blueberry-Banana Oat Breakfast Muffins:
- 3/4 cups old-fashioned oats
- 1 1/4 cups flour
- 1/2 cup granulated sugar
- 1 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup mashed bananas
- 1 egg, lightly beaten
- 1/2 teaspoon vanilla
- 6 tablespoons butter, melted
- 1 1/4 cup fresh blueberries
Directions:
Step 1: Add dry ingredients and 3/4 cup of the blueberries.
Step 2: Stir together gently.
Step 3: Mash bananas in a small bowl. Add melted butter, egg and vanilla.
Step 4: Combine wet ingredients together well.
Step 5: Add wet mixture to dry mixture
Step 6: Combine well. If mixture is too thick, add ¼ oil and ¼ cup milk.
Step 7: Add 1/3 cup of the mixture to each muffin cup.
Step 8: Bake for 18 minutes or until toothpick comes out clean and muffins are getting golden brown.
Cool on wire rack.

- Spray muffin tin generously
- Add dry ingredients and 3/4 cup of the blueberries. Stir together gently.
- Mash bananas in a small bowl. Add melted butter, egg and vanilla. Combine well.
- Add wet mixture to dry mixture and combine well.
- Add 1/3 cup of the mixture to each muffin cup.
- Bake for 18 minutes or until toothpick comes out clean and muffins are getting golden brown.
- Cool on wire rack.
