Fun Halloween Treats: White Chocolate Coconut Ghost Apples

Wheeeeeeee…Halloween is less than 3 weeks away! We get pretty excited about Halloween in our house! Caitlin has been weighing her costume options for weeks now. She’s torn between being Wednesday Addams or Sally from The Nightmare Before Christmas. She is also considering mixing up Jack Skellington and Sally in a gender bending type of costume. Sounds pretty interesting! Henry will probably be a ninja as he has for the past three years! He and his buddy Adam usually dress alike, and they have been super into the whole Ninja thing for a while now. Adam’s mom and I usually take the kids out trick-or-treating and have a party afterwards. This year I wanted to bring a snack that was kid friendly and something yummy the kids would enjoy. I decided to make some fun Halloween treats with these white chocolate coconut ghost apples.

The way I came up with this recipe was a little bit of an accident. I saw these cute white chocolate covered ghost apples in a magazine. Instead of buying white chocolate chips, I bought the white Wilton candies. When I opened up the bag of candies, I realized they were more of a winter white than a pure white. I went ahead and melted them and dipped my first apple into the mixture. The melted chocolate candies just slid down the apple. I didn’t think about how slick the outside of an apple was or how the melted candies would react to it. Time for Plan B.

I looked in the pantry to see what I could use and I found some shredded coconut. Not only would this cover up my weird looking apples, it would make them more white than they currently were. I rolled the apples in the shredded coconut, but it still had spots where the apple was showing through. I drizzled on some more chocolate and then patted on the coconut. This was the perfect move! I as so proud of my creation that I could not wait to show them to my family.

I opened the freezer and showed the apples to my husband. He said they looked more like an abominable snowman apple than a ghost. I told him since it wasn’t Christmas, they were going to have to be ghosts! No matter, they make some adorable and fun Halloween treats! I also used the smaller apples my local grocery store had instead of the larger apples. This helped in keeping the apples from falling off the cake pop sticks. To add some color, I slid a Halloween inspired straw over the sticks. I think the end result are some fun Halloween treats Carol and her kids will love!! I am also going to be bringing my Chocolate Dipped Halloween Caramel Popcorn Balls.

White Chocolate Coconut Ghost Apples

Ingredients

  • 1 large bag of white Wilton candies or white chocolate chips
  • 1 tablespoon coconut oil
  • 6 small apples
  • 1 small bag of shredded coconut
  • 6 cake pop sticks
  • 6 Halloween inspired straws (optional)
  • Candy eyes

Instructions

  1. Pour chocolates into a microwave safe bowl. Add coconut oil. Melt at 30 second intervals, stirring after each until chocolate is completely melted.
  2. Gently slide cake pop sticks into the top of each apple
  3. Dip your apple into the melted chocolate, making sure to coat evenly.
  4. Cover apple in shredded coconuts
  5. Dip candy eye into melted chocolate and stick to the apple
  6. Freeze for at least one hour.
