Ok, I know I am getting older, but why does time have to go by so fast? This summer break seemed like it lasted about 2 weeks and the kids are already back in school. I am thankful for the break, don’t get me wrong! The only way I can get any work done is if the kids are in school. I take Caitlin to her school, come home and homeschool Henry for a few hours and then start working. I am just lucky that I can work from home…in my pajamas…while I watch TV!
Lemon Lime Mojitos

There are so many people who work so much harder than I do. My husband delivers tires for a living, and by the end of his day, he is wiped out. He is looking forward to the Labor Day cookout we have planned. He has a friend who is shipping out to Germany, so we are having a big gettogether to say goodbye to him. I let Chris man the grill, while I make the sides and the drinks. One of my favorite cocktails is a mojito. I will make a pitcher of lemon lime mojitos a well as a pitcher of virgin lemon lime mojitos.
This cocktail (or mocktail) recipe is light, crisp and super refreshing. You can tweak this recipe to your individual tastes. The one thing that will stay true no matter the changes you make, is how delicious this drink is. The traditional Cuban cocktail calls for white rum, sugar, lime juice, sparkling water, and mint. I prefer to have a lemon flavor to mine, which is why I use this lemon lime mojitos recipe instead. For the cocktail, I use the club soda and not the lemon lime soda because I prefer my mojito to be less sweet.
If you want to make a virgin, or a mocktail version of the lemon lime mojitos, that is super easy. The kids like their drinks on the sweet side, so I would suggest using the lemon lime soda instead of the club soda. Caitlin likes to have the fresh mint from my garden in hers, while Henry leaves it out of his. He basically likes the lemonade soda with the fresh fruit. However you make it, you get a deliciously, thirst quenching drink for your labor day celebration.
Ingredients
- 3 teaspoons lemonade drink mix
- 2 1/2 cups water
- 1/2 cup rum
- 6 mint sprigs
- 3 cups club or lemon lime soda
- 3 lime slices
- 3 lemon slices
Instructions
- Add water, rum, and drink mix into a pitcher, stir vigorously until drink mix is completely dissolved.
- Add mint, and refrigerate until ready to serve.
- When ready to serve, add soda and serve over ice.
- Add one lime and one lemon slice to each glass.

I don’t drink often but when I do I order a mojito! I love that I can make a batch of these for the kids and a batch for the adults. I think I would do something like add a couple drops of grenadine to the kids so there are no mix ups.
