Blueberry-Banana Oat Breakfast Muffins ingredients

Gather your ingredients to make your Blueberry-Banana Oat Breakfast Muffins:

  • 3/4 cups old-fashioned oats
  • 1 1/4 cups flour
  • 1/2 cup granulated sugar
  • 1 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup mashed bananas
  • 1 egg, lightly beaten
  • 1/2 teaspoon vanilla
  • 6 tablespoons butter, melted
  • 1 1/4 cup fresh blueberries

Directions:

Step 1: Add dry ingredients and 3/4 cup of the blueberries.

Step 2: Stir together gently.

Step 3: Mash bananas in a small bowl. Add melted butter, egg and vanilla.

Step 4: Combine wet ingredients together well.

Step 5: Add wet mixture to dry mixture

Step 6: Combine well. If mixture is too thick, add ¼ oil and ¼ cup milk.

Step 7: Add 1/3 cup of the mixture to each muffin cup.

Step 8: Bake for 18 minutes or until toothpick comes out clean and muffins are getting golden brown. Cool on wire rack.

Blueberry-Banana Oat Breakfast Muffins

Ingredients

  • 3/4 cups old-fashioned oats
  • 1 1/4 cups flour
  • 1/2 cup granulated sugar

Instructions

  1. Preheat oven to 400
  2. Spray muffin tin generously
  3. Add dry ingredients and 3/4 cup of the blueberries. Stir together gently.
  4. Mash bananas in a small bowl. Add melted butter, egg and vanilla. Combine well.
  5. Add wet mixture to dry mixture and combine well.
  6. Add 1/3 cup of the mixture to each muffin cup.
  7. Bake for 18 minutes or until toothpick comes out clean and muffins are getting golden brown.

    I love how Valerie made that transition into the kitchen and enabled her audience to see a completely different side of her, I think it is remarkable that she has lent her talents to baking as well. Those muffins look so moist and blueberry is actually my favourite muffin flavour as well!

    My healthy go-to breakfast is a smoothie with Greek Yogurt, Frozen Fruit and Peanut Butter. Those muffins look a lot better, though! 🙂

    My favorite healthy breakfast is low-fat granola with plan yogurt that’s been mixed with a little honey and peanut butter. It’s a great mix of creamy and crunchy textures as well as sweet and tangy flavors. I like to eat it at home.

    I make a variety of muffins – from oatmeal- chocolate chip to pizza muffins and grab one when I am on the go. I started making them when my children were doing week on and week off between me and their father – sometimes they’d get here hungry but not enough time to eat a good breaky. Now we have a selection we randomly choose from; bacon and egg muffins to zuchini-chocolate chip everyone is happy.

    If I am in a rush to go someplace in the AM hours, my go-to breakfast is two hard boiled eggs and a piece of toast with raspberry or blueberry jam. I sometimes make myself muffins and eat them when I am in a hurry to get out of the house.

    I love oatmeal for breakfast. I try to change it up everyday by adding different fruit and spices. It’s so hot and delicious and really hits the spot. If I decide to stop for takeout for breakfast, I usually go to Panera. Lots of clean healthy breakfast choices there.

    I must say I don’t really have a healthy breakfast other than a banana and milk that is what I do.

    Goodness, those muffins look delicious. You make it look so easy, lol! My go to breakfast is usually an egg white omelet, and sometimes I like to make overnight oats for on the go. I guess it always depends on what I am feeling when I wake up!

    I always eat on the go. My go-to breakfast is refridgerated oats with fresh fruit or a protein bar.

    I like to make muffins and freeze them, then pop one in the microwave before i head out the door. These look really good and are all ingredients that I really like, so I’m saving this recipe to make and if this is indicative of the recipes in her cookbook, I’m sold.
