Since I started this blog, I have not shared much about my struggle with my weight. Truth be told, I haven’t found the right time to talk about it. I will say this much…I am so sick and tired of being sick and tired and I am ready for some major changes to take place in my life. I am going to kick off this week on a healthy start. I have a great gluten free recipe I think you are going to love! My daughter is obsessed with cooking with cauliflower and sent me a basic recipe for cauliflower biscuits from her Paleo diet days. I tweaked it and came up with these Cheesy Bacon & Herb Cauliflower Biscuits. I have played around with a lot of gluten free recipes over the past few years.
With Henry and his Asperger’s Syndrome, I have tried to incorporate gluten free into his diet whenever I can. I also try to do so in my diet as I know it is healthier than eating all those breads, pastas and other carb and gluten heavy foods. I will admit I am not always one to eat all her vegetables. If I can find a recipe that hides them or uses them in a way that I am more inclined to eat them, I am all about it. With these Cheesy Bacon & Herb Cauliflower Biscuits, you get a lot of flavor without all the carbs and gluten in a traditional biscuit recipe.
For this particular Cheesy Bacon & Herb Cauliflower Biscuits recipe, I use cheddar cheese and parsley. If you wanted to, you could use any cheese you like. My husband said he would eat them if I used pepper jack cheese, so I am going to try that next. I think dill would be tasty as well as a little cilantro for a little kick. As long as you follow the basic recipe, you can make substitutions with these items.
Cheesy Bacon & Herb Cauliflower Biscuits
Ingredients
- 1 cauliflower head, leaves removed
- 1/8 cup minced garlic
- 1/2 cup nonfat Greek yogurt
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked, diced bacon
- 1/4 cup parsley, chopped with stems removed
- 2 eggs
- 2 egg whites
- Salt and black pepper to taste
Instructions
- Preheat the oven to 400°F.
- Steam cauliflower in microwave for 10-12 minutes or until very tender. Place in food processor. Add garlic and pulse until smooth and creamy.
- Pour mixture into a large mixing bowl. Add in two eggs, cheese, yogurt, bacon, parsley, salt and pepper and mix together.
- In a separate bowl, beat egg whites until stiff and slowly fold into the cauliflower mixture.
- Coat a mini muffin pan with cooking spray and fill the cups with the cauliflower mixture.
- Bake for 20-25 minutes, until golden brown. Remove from the pan, and set on a cooling rack.
