She starred in my favorite show as a kid, One Day at a Time. I wanted to look just like her character, Barbara Cooper!

She also starred on Touched by an Angel, but these days she’s best known for her work in the kitchen. Her amazing cooking talents have been wowing fans for years. I have enjoyed seeing this side of Valerie. She has inspired me to add flavor and depth to my cooking.

Blueberry-Banana Oat Breakfast Muffins ingredients

Gather your ingredients to make your Blueberry-Banana Oat Breakfast Muffins:

  • 3/4 cups old-fashioned oats
  • 1 1/4 cups flour
  • 1/2 cup granulated sugar
  • 1 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup mashed bananas
  • 1 egg, lightly beaten
  • 1/2 teaspoon vanilla
  • 6 tablespoons butter, melted
  • 1 1/4 cup fresh blueberries

Directions:

Step 1: Add dry ingredients and 3/4 cup of the blueberries.

Step 2: Stir together gently.

Step 3: Mash bananas in a small bowl. Add melted butter, egg and vanilla.

Step 4: Combine wet ingredients together well.

Step 5: Add wet mixture to dry mixture

Step 6: Combine well. If mixture is too thick, add ¼ oil and ¼ cup milk.

Step 7: Add 1/3 cup of the mixture to each muffin cup.

Step 8: Bake for 18 minutes or until toothpick comes out clean and muffins are getting golden brown.
Cool on wire rack.

Blueberry-Banana Oat Breakfast Muffins

Ingredients

  • 3/4 cups old-fashioned oats
  • 1 1/4 cups flour
  • 1/2 cup granulated sugar
  • 1 teaspoons baking powder

  • 1 cup mashed bananas
  • 1 egg, lightly beaten
  • 1/2 teaspoon vanilla
  • 6 tablespoons butter, melted
  • 1 1/4 cup fresh blueberries

Instructions

  1. Preheat oven to 400
  2. Spray muffin tin generously
  3. Add dry ingredients and 3/4 cup of the blueberries. Stir together gently.
  4. Mash bananas in a small bowl. Add melted butter, egg and vanilla. Combine well.
  5. Add wet mixture to dry mixture and combine well.
  6. Add 1/3 cup of the mixture to each muffin cup.
  7. Bake for 18 minutes or until toothpick comes out clean and muffins are getting golden brown.
  8. Cool on wire rack.
