My sister is “famous” for her cheesecakes. No matter what your favorite flavor, she could make it. Me? Not so much! But I sure can master a no bake lemon cheesecake bars recipe with vanilla wafer crust!

This no bake lemon cheesecake bars recipe with a nilla wafer crust are silky smooth and full of lemony flavor. They are the perfect easy to make dessert!

No Bake Lemon Cheesecake Bars Recipe With Vanilla Wafer Crust

If you love cheesecake, you are not going to believe how easy this recipe is to make. I am not kidding you guys! They are just as rich and creamy as a traditional cheesecake but without the hassle.

The Nilla Wafers add a unique flavor we love. Just mix them with some butter, top with the creamy filling, and you have a no brainer dessert!

Easy And Scrumptious

This recipe is so stinking easy to make! It takes 10 minutes to whip everything together. And if you don’t like lemon, just use another flavor of Jello!

We have made lime, strawberry, orange and cherry (which is to die for!!) No matter what flavor you make, this recipe is scrumptious!

  • 2 cups crushed vanilla wafers
  • 3 tablespoons melted margarine
  • 3/4 cup boiling water
  • 1 3.5 ounce box of lemon Jello
  • 1 cup of ice cubes
  • 1 8-ounce package of softened creamed cheese
  • 1/4 cup of sugar
  • 2 tablespoons lemon juice
  • 8 ounces thawed whipped topping, divided

Here is how to make your recipe:

  • Step 1: Line an 8×8 inch pan with foil or wax paper 
  • Step 2: Mix Nilla Wafer crumbs and margarine and press onto bottom of your pan. Keep refrigerated until ready to use.
  • Step 3: Add boiling water to lemon jello; stir 2 min. until completely dissolved. Add ice; stir until melted.

Step 4: Beat cream cheese and sugar in a large bowl with mixer until blended. Gradually beat in gelatin. Whisk in 2 cups whipped topping; pour over crust. Refrigerate 4 hours or until firm. Serve topped with whipped topping if desired.

    Last night I made a chocolate cheesecake. A little time to prepare, an hour in the oven in a water bath followed by an hour with the oven door open cooling, another hour cooling on the wire rack and six hours in the fridge. I think I just fell completely in love with your recipe! So much easier and I bet the lemon flavor is awesome!
