My sister and I shared a room and we would lay in bed on Christmas Eve, encouraging each other to stay awake so we could meet Santa. And the joy that erupted from us when we saw all those gifts piled up under the tree! As an adult, I feel that same joy, except now it is seeing my kid’s excitement at their pile of toys!
Another holiday memory I have is helping mom with her holiday baking. I have a notebook full of her recipes, many of which I still make today. Because I am short on time as a busy mom, I have adapted some of her recipes to fit in with my often over loaded lifestyle! Instead of spending hours in the kitchen making mom’s apple pie and cheesecakes, I have combined the two and have created Mini No Bake Caramel Apple Pie Cheesecakes. These little guys may be small, but let me tell you, they are bursting with flavor!
Not only am I a busy mom, but I am also on a budget. When it comes to saving money but not skimping on quality or flavor, I have a few tricks up my sleeve! If you promise to tell all your friends, I will let you in on my secret! I just head over to my local Walmart and pile up on my favorite Kraft items from the Walmart Bake Center. You can create easy, budget friendly holiday recipes like my Mini No Bake Caramel Apple Pie Cheesecakes. These tasty effortless pies are made with some family favorite ingredients like yogurt.
These Mini No Bake Caramel Apple Pie Cheesecakes take less than 15 minutes to make, so no matter how busy you are you have time for these! In the past I have made this recipe with plain yogurt. By adding the Dannon® Light & Fit® Caramel Apple Pie Yogurt, you get that deliciously crisp apple pie flavor without all the time and effort of making an apple pie from scratch. With these 3 ingredients, some spices and apples from the pantry and a few items from the fridge, these pies can be one of the easiest holiday or after school snacks you can make!
By cutting back on the cream cheese and adding the yogurt, my Mini No Bake Caramel Apple Pie Cheesecakes are a healthier snack option. And did I mention they are super easy to clean up? By using the individual Keebler® Ready Crust® Mini Pie Crusts, you just grab a spoon and toss the foil container when you are done! Easy Peasy!! The kids love helping me make these Mini No Bake Caramel Apple Pie Cheesecakes. While I am cooking down the apples, Caitlin can mix the other ingredients together. Henry loves to help drizzle the caramel syrup and add the Reddi-wip®. I will admit, these effortless pies do not last long in my house. As a matter of fact, my kids have been known to eat them as fast as they make them!
Mini No Bake Caramel Apple Pie Cheesecakes
Ingredients
- (1) 8 oz. package of softened cream cheese
- (2) Light & Fit® Caramel Apple Pie Yogurt
- (1) cup diced apple with peels on
- 2 Tbsp brown sugar
- 2 Tsp cinnamon, divided
- 2 Tbsp butter
- 1 Tsp. lemon juice
- Caramel syrup or sauce.
- (2) Keebler ® Ready Crust Mini Pie Crusts (6 count)
- Reddi-wip® original 13oz can
Instructions
- In a medium size bowl, combine cream cheese, Light & Fit® Caramel Apple Pie Yogurt, 1 Tsp. cinnamon, lemon juice and 1/2 cup of Reddi-wip®. Spoon into Keebler ® Ready Crust Mini Pie Crusts. Place in refrigerator to keep chilled.
- In a medium saucepan, melt butter. Add brown sugar, and cinnamon. Add diced apples. Cook until apples are just shy of being tender. Remove from heat.
- Take out cheesecakes and top with 1 Tbsp. of apples, Reddi-wip® and drizzle with caramel syrup or sauce.
