This family has a sweet tooth! We love them all! Cakes, cookies, muffins, cupcakes, brownies, candy, and on and on and on. You name it, we probably love it. One of our family favorites is my Gluten Free Lemon Poppy Seed Pound Cake Recipe.

One of my favorite flavors in my desserts is hands down, lemon. I love the juxtaposition of sweet and tart. So, one of the first recipes I converted to gluten free was my lemon pound cake recipe.

The Right Flour Is Key

Gluten is one of the things that makes your baked goods so light and fluffy. The trick when you are making a gluten free recipe is to not make a hockey puck.

Using a flour is key to a delicious gluten free dessert. My favorite gluten free flour is the Gluten Free All Purpose Flour from King Arthur’s.

This Gluten Free Lemon Poppy Seed Pound Cake is a delicious dessert the whole family will enjoy.

A Recipe That Will Satisfy Any Sweet Tooth

The kids love this recipe. It is so light and fluffy! and moist. My husband will have his with a scoop of vanilla ice cream or whipped cream. I like mine as it is. Any way you slice it, this recipe

Gluten Free Lemon Poppy Seed Pound Cake Recipe

Gluten Free Lemon Poppy Seed Pound Cake Recipe

Prep Time: 5 minutes
Cook Time: 45 minutes
Additional Time: 15 minutes
Total Time: 1 hour 5 minutes

Ingredients

  • 1 1/2 cups all-purpose gluten-free flour (I use King Arthur's Gluten Free All Purpose)
  • 3/4 tsp. xanthan gum
  • 2 tsp. baking powder
  • 1 tsp. sea salt
  • Zest of 1 lemon
  • 1 1/2 sticks of room temperature unsalted butter,
  • 4 ounces room temperature cream cheese
  • 1/2 cup coconut milk
  • 1 1/2 cups granulated sugar
  • 3 eggs at room temperature, beaten
  • 1 tsp. pure vanilla extract
  • 1 tbsp. lemon juice
  • 1/8 cup poppy seeds (you can add more if you like more.)
  • Glaze:
  • 1 1/2 cups confectioner’s sugar
  • 1/4 tsp. sea salt
  • 3 tsp. lemon juice
  • 3 tsp. milk

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease a bundt pan or 2 loaf pans Preheat oven to 350 degrees F.
  2. In a medium bowl, combine flour, baking powder, guar gum and salt. Stir well and set aside.
  3. In a medium bowl, beat sugar and butter until creamy. Add eggs and beat until well mixed. Add milk and vanilla and beat until lightly fluffy.
  4. On low speed, slowly add the flour mixture into the wet mixture. When all flour is added, beat on medium to high speed for 1 to 2 minutes. Add poppy seeds.
  5. Pour the batter into greased pan and bake for 45 to 50 minutes until golden brown or until toothpick inserted in center comes out clean.
  6. Cool 15 minutes before removing cake from pan. Add glaze and serve

    My kids and I have been gluten-free for 10 years now due to medical need and thank goodness much has changed during that time. King Arthur is one of my favorite blends too. I like the flavor (or lack of distinct flavor) and it bakes very much like regular flour. Since gluten is a binder it is what holds everything together hence usually needing multiple flours to produce the ability to bind baked goods together as wheat flour can. You’ve found a good blend and I like that it doesn’t have any gums in it.

    I’ve been interested in trying Gluten free food but to be honest, this is the first baked good I’ve seen that actually looked tasty. Most look rather anemic. Your’s looks very tasty.

    Poppy seeds give muffins or cakes the greatest texture. I never bake but for gluten free people this looks like a great cake to have in the arsenal.
