My Favorite Small Appliance Ever
My favorite small appliance is without a doubt, my instant pot. There are so many ways to use it, and even on the most hectic of days, I love that I can have dinner on the table in no time with this tool.
I have made some really delicious dinners with my instant pot, like open face french dips and Asian wings. But, I think that this taquito recipe is my favorite!
A Delicious Dinner That Is Quick
This recipe requires 10 minutes of cook time in the instant pot, but please note, it also requires 10 minutes of resting time. This is important, so please allow the extra time for the pressure to release naturally.
After the dish comes out of the instant pot, it is ready to bake for 15 minutes to get the crispy crunch we all love with taquitos! If you are in a bit of a rush and don’t have an extra 15 minutes, you can serve this as a burrito bowl, which is incredibly delicious!
Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 small chopped onion
- 2 teaspoons minced garlic
- 2 cups chicken broth
- 3 tablespoons or 1 packet taco seasoning
- 1-2 pounds boneless, skinless chicken breasts cubed
- 1 can black beans, drained and rinsed
- 1 can sweet yellow or white corn, drained
- 1/4 cup enchilada sauce
- 1 jar medium salsa
- 1 cup long-grain white rice
- 1 cup shredded cheese of your choice
Instructions
Steps 1-6: Set your Instant Pot to the sauté function. Add the olive oil, butter, garlic and onion. Cook until the garlic and onion are fragrant and translucent.
Steps 7-10: Add chicken broth and taco seasoning. Mix ingredients together well. Add the chicken and cook until no longer pink.
Steps: 11-12: Add the corn and beans.
Steps 13-14: Add the salsa and enchilada sauce to Instant Pot.
Steps 15-16: Add the rice and stir the ingredients together.
Steps 17-18: Close and lock the lid on the Instant Pot and make sure the vent is closed. Set Instant Pot to 10 minutes. Allow the pressure to release naturally for 10 minutes. Add cheese and mix ingredients together.
Steps 19-21: Place 1-2 tablespoons of mixture onto an 8” tortillas. Roll and place seam side
down onto a baking sheet.
Bake at 350 degrees for 15 minutes. Serve with your favorite toppings and enjoy! If you prefer, you can serve as a burrito bowl with your favorite toppings!
