It is “vegan junk food”, which is healthy vegan food that doesn’t skimp on taste. Dirty Vegan is a celebration of all the amazing tastes and dishes available to those on vegan diets. I have made a few vegan recipes on the blog. One of my favorites are Vegan Carrot Cake Cupcakes.

But cooking like a dirty vegan is exactly what I have been needing in my life! Maybe you would like to cook like one too? Well, you’re in luck. The Dirty Vegan is an all-new cookbook from Catherine Gill. The Dirty Vegan has over 100 vegan recipes in that are styled as “vegan junk food.”

It was lovingly created by blogger and holistic vegan chef Catherine Gill. She’s been running her popular blog, The Dirty Vegan since 2010. It focuses on comfort food style vegan food that are fun and healthy.

She also ran Dirty Vegan Foods, a vegan bakery that specialized in vegan versions of classic desserts. Oh how I would have loved to visit her bakery!

One of my favorite things to eat in the world is soup. If you check out my Pinterest feed, you will see lots of recipes for soups, stews and chills! I knew I had to find a delicious vegan soup recipe!

When I saw a recipe for Loaded Vegan Black Bean Soup recipe in The Dirty Vegan, I had to make it! Not only is it the perfect weather for soup, but it is super easy to make!

Other than the vegan sour cream and cheese, I had all the other ingredients in my pantry and fridge tomake this vegan soup recipe.

Just be sure to look at your black beans because some have an animal protein stock, and that is totally against all things vegan! I love to make an easy soup recipe I can simmer and forget about.

This is a recipe you can make on a stove top or in the crock pot. I put this recipe on low in the crock pot for 2 hours and it was perfect!

As I mentioned above, The Dirty Vegan is all about flavor and boy do you get that with this recipe! This soup is pretty filling, so you can serve it on it’s own and your tummy will be quite happy.

Loaded Vegan Black Bean Soup

Ingredients

  • 2 tbsp. extra-virgin olive oil
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 2 cans vegetarian black beans, undrained
  • 1 large tomato, chopped
  • 1/2 tsp. ground cumin
  • Salt and pepper to taste
  • Toppings:
  • 4 tsp. fresh cilantro
  • 4 tbsp. vegan cheddar cheese
  • 4 tbsp. salsa
  • 4 tbsp. vegan sour cream
  • 24 tortilla chips, crushed

Instructions

  1. In a large soup pot, saute' onions and garlic in olive oil until fragrant (about 2 mins.) Add black beans, cumin, tomatoes and salt and pepper. Simmer for 25 minutes. Serve in 4 bowls and garnish with toppings. Enjoy!

    I regularly eat vegan dishes. I am a pescatarian and only eat seafood 2x’s a week. The rest of the time, I’m eating vegetarian – and mostly vegan. I love slow cooker soups that fill my house with wonderful smells all day long. My pinterest feed probably looks a lot like yours

    Though my family isn’t vegan, I am looking for healthier recipes for my family. We make dole whip (frozen pineapple, coconut milk) that is vegan and we also make vegan muffins using alternative ingredients like coconut milk and pureed veggies or fruits.

    That soup looks delicious! We don’t consciously eat vegan, but many vegan recipes appeal to me. We go ‘meatless’ at least once a week…usually with a pasta dish or veggie stir fry but this book could give me lots of other great ideas!

    I do use vegan recipe often my son has Celicas disease and cant have gluten so using veggies makes cooking so easy. He loves my veggie stew so good just put in what ever veggies are in season in the slow cooker with seasonings
