Spicy Shrimp Cobb Salad & Creamy Avocado Vinaigrette

Living in the south, it can get really hot and humid. This means my thermostat is set at 68 degrees, my hair will get frizzy and I eat a lot of salads. I did not grow up on salads. There were 6 of us kids and salad was not a favorite for any of us. This is something I didn’t discover I loved until I was in my late 20’s. I worked in a Mexican restaurant and we served several salads. I tried the Quesadilla salad with steak fajita meat and I was in love! I thought salad was just a bunch of greens and vegetables! With this discovery, came a lot of experimentation. One of my all time favorite salads is a Spicy Shrimp Cobb Salad. I love the mix of the spicy shrimp with the cool greens.

Another reason I love salads is the millions of salad dressings to choose from to add flavor to your salad! I love just about any salad dressing, from spicy to sweet to creamy to chunky! One of my favorite homemade salad dressings is an Avocado Vinaigrette. I have just recently found a love for avocados, so adding them to my salad was a logical progression. The next logical step was to make them into a salad dressing! I love this Avocado Vinaigrette because it has a little kick, is creamy and has that yummy avocado flavor. Oh, and it is easy to make! You just toss a few ingredients into your food processor and you are ready to dress that salad! Spicy Shrimp Cobb Salad If I had to choose my top favorite salad, a cobb salad would be at the top. If you think about it, a cobb salad is almost the perfect meal! It is packed full of veggies and protein, is crunchy and has layers of flavor. I love the bite of the feta cheese, the crunch of the bacon and the smooth avocados and hard boiled eggs. The one thing I have found about a cobb salad is it can be a bit mild. To step up the flavor profile, I love to add spicy shrimp. This gives your cobb salad the perfect amount of heat without being overpowering. Kuhn Rikon Ratchet Salad Spinner One thing I did learn from working in that restaurant was to make sure you clean your lettuce and vegetables before you assemble your salad. With the Ratchet Salad Spinner from Kuhn Riko, you get all that and comfort too. With their ergonomic ratchet handle, you get more spin power without breaking your hand!
