Have you ever had to lose weight? I sure have! About a million times! It was so much easier when I was in my 20’s and early 30’s to lose a few pounds. After 3 kids and a decade of working from home, I have put on about 50 extra pounds. Sadly, that is in addition to the 50 or so I was already above my recommended weight! This year, I decided to put an end to this yo-yo dieting of mine and lose this extra 100 pounds once and for all. Can you imagine? That is the same as my 14 year old son!
I have really gotten serious about being successful at losing (and keeping off) this weight. I have joined a gym and worked out several days a week for almost 2 months. I have cut out red meat and rarely eat chicken or seafood anymore. I have decided to eat a mainly vegetarian diet and so far, so good! I thought I would miss the steaks, burgers, fried chicken, etc., but I really haven’t. I have enjoyed finding new vegetarian recipes and experimenting in the kitchen!
One thing I have really enjoyed is trying out new smoothie recipes! I have a smoothie almost every morning and have been known to have one for lunch as well. When I was out of town last weekend, I ate pizza, a burger (I know, I know) and 2 milkshakes. I knew that was going to not only show up on the scale, but make my body not very happy with me. To counter balance that off plan eating, I have been drinking this delicious Vegan Cran-Raspberry Mint Smoothie. It is so easy to make and is packed full of flavor and ingredients that are so good for you!
This Vegan Cran-Raspberry Mint Smoothie recipe can be tweaked any way you like, so have fun and experiment! I have made it with pineapples and coconut for a tropical smoothie and it is super good! When I need a little more protein, I will also add some cashews. They pair really well with the almond or coconut milk. Ingredients
- 1 large fresh orange, peeled
- 1/2 cup frozen raspberries
- 1/2 cup cranberry juice
- 1 scoop unflavored pea or plant based protein powder
- 1/2 cup almond or coconut milk
- 1/2 cup ice (optional)
- 4 fresh mint leaves, mulled
Instructions
- Combine all ingredients in blender. Mix until smooth. Serve immediately. Garnish with fresh mint
