I learned my skipping breakfast, and often lunch, was setting me up for weight loss failure. I was eating more than a day’s worth of calories during the night. It had me gaining weight. I have been eating breakfast ever since. I have been introducing more vegan foods into my food plan. One of my new favorites is my Vegan Protein Breakfast Cookie Recipe.

I went to my doctor a few weeks ago. They did some follow-up blood work. I am officially diabetic. This means I must drastically change my diet. The key is to get right back up and get on the wagon again. I have scoured the Internet and many cookbooks for diabetic friendly recipes. It took some time to find recipes that satisfied my cravings that kept me on my new food plan. My Vegan Protein Breakfast Cookie Recipe is the a delicious and healthy way to start my day!

Vegan Protein Breakfast Cookie Recipe

Ingredients

  • 1/2 cup whole wheat flour
  • 2 cups rolled oats
  • 1/4 cup unsweetened shredded coconut
  • 1 cup cranberry trail mix (I get mine in the organic section of the grocery store)
  • 1 tablespoon VeganSmart Vanilla Nutritional Shake
  • 1/2 teaspoon baking soda
  • 1/4 cup mashed banana
  • 1/2 cup packed brown sugar substitute
  • 1/2 cup applesauce
  • 1/3 cup water

Instructions

  1. Preheat oven to 350 degrees.
  2. In a small bowl, add flour, baking soda, salt and VeganSmart powder.
  3. In your stand mixer, using the paddle attachment, cream your vegan butter and brown sugar until fluffy and pale. Add in your vanilla, water, banana and applesauce.
  4. Add the dry mix into the wet mix. Using a spoon, not your mixer, add in the oats, nuts, cranberries and coconut.
  5. If your mixture is too wet, cover with plastic and chill for a few hours.
  6. Add a dollop of mix, using a large ice cream scoop, Allow room for some spreading. Bake 16-18 minutes. Allow to cool on a wire rack.

    These look delicious!! Pinned this recipe for later. I have given up so many of my old favorites, and now I’m in sort of a rut. I havent really tried baking anything in this new way of eating, so this recipe will certainly help me get into it. My favorite breakfast option is a protein shake right after my workout. In addition to the protein powder, I add a banana, some soaked chia seeds, cinnamon and cacao powder.

    These cookies do look good. I think cookies are my biggest weakness, and like you are, I should follow your example and eat healthier. My favorite quick breakfast is yogurt. I am dealing with depression after my daughter died by suicide 16 months ago. I am trying to incorporate more foods like blueberries, strawberries, etc., that help to increase my dopamine levels.

    “Power” oatmeal. I add dried fruit, chopped nuts, etc to the oatmeal box so it’s all ready to go — all I need to do is make the oatmeal in the morning.

    I remember my mom while I was reading your post. She is also diabetic. She consulted a doctor and after weeks of taking the medicines she received another surprising news. Her uric acid gets high. She gets so depressed because the doctor tells her that there are many foods which she must not eat. My mom has a good appetite and knowing she cannot eat much as she wants make her unhappy.

 A quick & easy breakfast for me is 1/2 cup oats, 1 scoop (flavored) protein powder, milk of choice, and sometimes I add 1-2T of peanut butter or other nut butter. Once all mixed up, I add 1c chopped fruit of choice.

    I can’t wait to try this recipe as I found out I am allergic to dairy, soy, eggs. I really need some new ideas for Breakfast.

    I hope you are doing well with your diabetic diet. Good for you! I just found out my mom who is diabetic will be having to have her leg amputated. Really, really sad news today.
